Tips

  • Set the tasting portion for every stall before shopping. This lets you calculate whether each seller needs enough product for one sample per guest or several smaller tastings.
  • Keep chilled products in coolers until they are needed, and collect them on the day or within 24 hours of serving. Do not leave dairy, meat or other perishable items at the stall without cooling.
  • Count reusable plates, bowls and glasses by stall, then add at least 10% extra for breakage, dropped items and late replacements. Include separate serving spoons, platters or trays so guests do not use eating utensils.
