Tips
- Plan one smoker or barbecue for each competing team, then add one spare thermometer per two teams. Check that every cooker has a safe fuel supply before shopping day.
- Keep raw pork refrigerated until it goes onto the smoker. Use at least one cooler for meat and a separate cooler for drinks so repeated opening does not warm the food.
- Count reusable plates, bowls, cups and cutlery for every judge, participant and guest, then add 10% extra. Sample portions create more washing and serving demand than a normal meal.
