Tips

Plan one complete place setting per seated guest, plus at least 10% extra plates, forks, knives and spoons. For a buffet, add serving spoons separately so guests are not using their own cutlery.
For the first hour, allow two to three drinks per person; for each further hour, allow one to two. Chill drinks in batches and keep water glasses available throughout the show.
Prepare separate meals for dietary requirements and label them before loading the car. Keep these meals apart from the main catering so they are easy to find at service time.
Count every cable needed for the speakers, mixer, laptop, microphones and lights, then pack at least two spare extension cords and one spare power strip. Bring spare batteries for every wireless microphone.
Do not leave the technical kit until the day of the show. Pack HDMI cables, microphone stands, lighting fixtures and backup batteries together, and test the microphones before guests arrive.
