What to buy for a mussel night

A mussel night needs more than mussels and bread. Plan the food, serving pieces and cooking equipment around your final guest count, then add chilled storage and enough tableware for the dessert and coffee service. This checklist also covers the items that are easy to forget, such as gas for outdoor burners, sauce bowls, colanders and extension cords. Buy or collect the mussels close to serving time and keep them chilled until cooking.

Tips

  • Order the mussels and bread only after you have confirmed the final guest count. For a generous serving, allow about 1 kg of mussels per adult, plus extra bread for soaking up the cooking liquid.
  • Provide one mussel bowl and one set of mussel cutlery per guest, then add dinner plates, dessert plates, glasses and coffee cups for the later courses. Keep a few spare place settings available for breakages or unexpected guests.
  • Check the cooking setup before shopping: each mussel pan or large cooking pot needs a suitable burner, and outdoor cooking also requires enough gas cylinders. Test the equipment before guests arrive rather than discovering a missing connector during service.
  • Keep raw mussels chilled in coolers until they go into the pans. Do not leave them at room temperature while setting tables; prepare vegetables, herbs and sauces first so the mussels can be cooked soon after collection.
  • Plan drinks by serving time, not just by guest count: allow two to three drinks per person for the first hour, then about one per hour after that. Chill drinks in advance and provide coffee, tea, cups and kettles or coffee machines for the end of the meal.

Frequently asked questions

How many mussels do I need per person for a mussel night?
Allow about 1 kg of mussels per adult for a main meal. Add more if mussels are the only substantial dish, and confirm the final guest count before placing the order.
How much bread should I buy for a mussel night?
Plan roughly 150 to 200 g of bread per person, depending on whether you are serving dessert or other substantial sides. Buy it close to serving time so it stays fresh.
How long can mussels stay out of the fridge?
Keep live mussels chilled until preparation and avoid leaving them at room temperature for more than 1 to 2 hours. Use coolers with ice packs, without submerging the mussels in fresh water.
What equipment do I need to cook mussels for a crowd?
Use mussel pans or large cooking pots, burners, gas cylinders, colanders and serving spoons or trays. Check the capacity in advance: several smaller pans may be faster and safer than trying to cook a large batch in one pot.
