Tips

  • Allow one market stall or clearly defined selling area per vendor, then add at least one extra table for shared tastings, information or overflow stock.
  • Arrange chilled storage before the final stock check. Use refrigerators or coolers with portable thermometers, and leave enough capacity for every vendor’s confirmed quantities rather than filling them completely.
  • Count power-hungry equipment before the market opens. Contact grills, induction hobs, refrigerators and cash machines may need separate outlets, so map power points and bring extension cords and power strips only where they are suitable and safe.
  • For each tasting point, prepare separate cutting boards, knives and meat tongs, plus serving platters, plates and reusable cups. Keep extra utensils available so a dropped or contaminated item can be replaced immediately.
