A food market needs more than ingredients for each stall. You also need enough shared tableware, serving equipment, cooling capacity, cooking tools and furniture for the site. Tips

  • Count tableware by expected visitors, not by number of stalls. For a market serving 100 people at once, prepare at least 120 reusable plates, bowls and cups, plus 120 sets of knives, forks and spoons.
  • Ask every food stand for its cooling and heating needs at least 14 days before opening. Record the required refrigerators, coolers, food warmers and induction plates booth by booth so you do not discover a power shortage on setup day.
  • Reserve tents, market stalls, tables and tablecloths as soon as the date and layout are fixed. For each booth, confirm the footprint, serving side and whether a tarpaulin is needed for rain protection.
  • Keep shared equipment separate from stall stock. Label serving platters, serving spoons, cutting boards, knives, mixing bowls and food storage containers by booth before delivery to prevent equipment being misplaced.
  • Buy practical extras no later than 3–5 days before the market: foil trays, coffee cups and spoons, napkins, bin liners, gloves, cleaning cloths and hand-washing supplies. Store chilled goods only after the refrigerators and coolers have reached temperature.
