Tips

  • Allow at least 10–15% extra cups, plates, cutlery and napkins beyond your expected number of servings. Hot drinks and soup create the most frequent shortages because visitors often return for another serving.
  • Plan hot drinks as separate service points: coffee equipment, a kettle, mugs, tea glasses, wine glasses and a thermos prevent one queue from blocking the whole market. Prepare mulled wine in a dedicated pot rather than sharing the coffee setup.
  • For soup and sandwiches, prepare serving spoons, tongs, soup bowls, dinner plates and a cutting board before shopping day. Keep chilled ingredients in a cool box until preparation and service, rather than leaving them on a stall.
