  • Confirm dietary requirements before finalising the menu. Keep a written count of each alternative dish and label allergens on both the printed menus and the serving platters.
  • Set the walking route before arranging the room. Check that every course location has enough table space, lighting and a clear path for guests carrying plates and glasses.
  • Count tableware by course, not just by guest. For a three-course dinner, plan at least one dinner plate, one deep or dessert plate where needed, one cutlery set and the required glassware per guest, plus a small reserve.
  • Check refrigerator and cooler capacity before buying fresh ingredients. Chill drinks and store prepared dishes separately so food for later courses is not blocked by bottles and containers.
