Tips

Count one market stall per vendor, then add at least one spare table for registration, information or overflow. Confirm the final vendor count before ordering furniture.
For drinks and samples, plan reusable cups, plates, bowls and cutlery by service point rather than by vendor. A practical starting point is two sets per expected visitor if washing during the market is not possible.
Chill drinks at least 4 hours before opening, using coolers that can hold the full quantity without blocking access. Check cooling equipment the day before, not when vendors arrive.
