Tips
- Buy 250β300 g of boneless meat per adult, or about 350 g if the barbecue is the main meal. Add vegetarian alternatives separately rather than assuming every guest will eat the same amount.
- Plan two to three drinks per person for the first hour, then one drink per person for each additional hour. Chill the drinks at least 4 hours before serving and keep a separate cooler for bottled water.
- Allow one bread serving and around 150β200 g of salads and side dishes per person. Prepare salads and sauces no more than 24 hours ahead, then keep them refrigerated until the buffet is set out.
- Use separate cutting boards, knives and serving utensils for raw meat and ready-to-eat food. Set out clean serving spoons and covered trays before lighting the charcoal, so cooked food does not go back onto raw-meat equipment.
- Check power, tables and weather at least 48 hours before the barbecue. If coffee machines, kettles, lighting or speakers need electricity, test the extension cords and power strips before guests arrive.
