Tips

  • Plan tableware for your busiest serving period, not your average one. For every 10 seated visitors, allow at least 10 plates, bowls, mugs, glasses and sets of cutlery, plus a 10% spare allowance if washing up during the market is difficult.
  • Keep chilled products and drinks in separate coolers where possible. Put drinks on ice or into coolers at least 2 hours before opening, and leave enough cooler space for incoming chilled food.
