- Confirm the date, location and any permits before contacting stallholders. Once you know the available space, draw the market layout and decide where tents, stalls, seating, power and chilled storage will go.
- Ask stallholders for their booth requirements and delivery times at least two weeks before the market. Record dietary requirements at the same time, rather than trying to collect them during final setup.
- Create one timed run sheet for deliveries, fresh-produce collection, food preparation, stall setup and opening. Print copies for volunteers and stall leads so people are not relying on messages or memory.
