  • Confirm dietary requirements before finalising the shopping list. A single missing substitute can hold up an entire workstation, so check the participant list and recipes together at least 5 days before the workshop.
  • Number every workstation before participants arrive and distribute ingredients by station. Set out one cutting board, chef’s knife, mixing bowl and measuring set per group where possible, rather than making everyone share at the start.
  • Prepare tiramisu in advance so it has time to chill while the other courses are being cooked. Aim to finish it at least 4 hours before serving, or prepare it the day before if the recipe allows.
  • Check the kitchen inventory against the recipes, not just against a general equipment list. Count cooking pots, frying pans, baking dishes, portable cooktops and kitchen timers for every group before shopping or renting replacements.
  • Set up the serving area separately from the cooking stations. Put dinner plates, deep plates, dessert bowls, cutlery, water glasses and wine glasses there, and chill drinks before participants arrive so serving does not interrupt supervision.
