  • Confirm the venue, stall spaces and power supply before publishing the event. Check every outlet against the needs of coffee machines, kettles, soup kettles and food warmers, and keep a clear route to each one.
  • Set prices and allergen information before sending invitations. Print price lists and route signs at least 2–3 days before the market so missing information can still be corrected.
  • Give catering and other suppliers the final numbers and dietary requirements no later than 7 days before opening. Keep a written confirmation of delivery times, equipment and serving quantities.
