Tips

  • Plan about 2 to 3 bread portions per guest, plus spreads and butter. Buy extra bread if the breakfast runs longer than two hours or if sandwiches are the main meal.
  • Allow 2 to 3 drinks per person during the first hour, combining coffee, tea and water. Check that you have enough coffee cups, teaspoons, water glasses and hot-water capacity before shopping.
  • Buy 1 to 2 eggs per guest and boil them close enough to serving time that they can still be offered warm. Arrange a hot tray or another way to keep them at serving temperature.
  • For fruit and yogurt, allow roughly 150 to 200 g of fruit and 150 to 200 g of yogurt per person. Prepare cut fruit shortly before serving and keep yogurt chilled until the buffet opens.
  • Count plates, cups, glasses and cutlery against the final registration number, then add at least 10% spare pieces. Check serving platters, serving spoons, butter knives and bread knives separately; these are easy to overlook when the groceries are ready.
