  • Confirm the final guest count at least 5–7 days before the brunch. Use that number to adjust food, tableware, chairs and drinks rather than relying on early registrations.
  • Check the barbecue and gas cylinders 2–3 days beforehand, not on the morning itself. Make sure the barbecue works and that the cylinders are filled or replaced if needed.
