- Set the date, room and kitchen before opening registration. Confirm the entrance and route at least a few days ahead, especially if guests need clear directions.
- Close or review registrations early enough to buy the right amount of ingredients. Use the final guest count to check seating, plates, cups, cutlery, pans and hotplates.
- Collect dietary requirements with each registration, then turn them into clear allergen information. Keep special ingredients and serving utensils separate where needed.
