- Set up one complete tasting place per guest: a sample glass, water glass, form, pen, and enough table space to compare notes. Print a few extra forms for late registrations or spilled pages.
- Keep bread and snacks off the tasting table until guests have evaluated an oil. Bread is useful between samples, but eating it before tasting can affect how guests judge aroma and flavour.
