  • Set the guest deadline before ordering catering. Use the confirmed registrations and dietary requirements to calculate portions, rather than relying on the original invitation list.
  • Plan the room around both dining tables and cocktail tables. Leave clear routes to the entrance, coat racks, buffet tables and any photo backdrop so guests are not forced through seated areas.
  • Count tableware by place setting before the event week: dinner and dessert plates, cutlery, water and wine glasses, plus champagne glasses if they are used for the arrival or toast. Add a small spare supply for breakages.
  • Create a separate drinks schedule for shopping, chilling and service. Move bottles into refrigeration early enough that champagne and other drinks are cold when guests arrive, not just before the toast.
