- Confirm the final guest count and dietary requirements before buying ingredients. Use that number to calculate portions, plates, glasses and seats rather than guessing.
- Chill drinks several hours before guests arrive. If the refrigerator is full, use cool boxes and put the welcome drinks where guests can reach them without entering the kitchen.
- Set out the tableware before cooking: dinner plates, deep plates, dessert plates, water glasses, wine glasses, cutlery and serving utensils. This exposes missing items while there is still time to replace them.
