Tips

  • Send invitations at least 3 weeks ahead and ask guests to reply with both attendance and dietary requirements. Confirm the final number of guests 5–7 days before shopping.
  • Check the weather 5 days before the barbecue. If rain is likely, reserve the party tent early enough to cover the tables and buffet, not just the cooking area.
  • Prepare marinades, salads, sauces, snacks and chopped vegetables the day before where possible. Keep raw meat covered and refrigerated, and use separate boards and utensils for vegetables.
