  • Close registrations before ordering mussels, bread and drinks, then use the final guest count to plan portions and tableware. Keep dietary requirements with the guest list so they are not missed during shopping.
  • Check the weather forecast before arranging outdoor tables, lighting and cooking equipment. Allow time to move the buffet, gas burners or coolers under cover if conditions change.
  • Test mussel pans, large cooking pots, gas burners, gas cylinders, extension cords and food warmers before guests arrive. A cooking setup that has not been tested can delay the entire meal.
  • Keep collected mussels chilled until cooking and avoid leaving them in direct sun during setup. Put coolers in position early, but do not fill them so tightly that cold air cannot circulate.
