- Confirm the final guest count before shopping. It affects how much meat, salad, drinks, charcoal or other barbecue fuel, crockery and seating you need, and gives you a clear number for portions.
- Prepare the meat in stages: keep it refrigerated, make the marinades ahead, then portion and marinate it before the event. Store prepared food in sealed containers and avoid leaving raw meat at room temperature.
- Check the weather forecast and inspect the grounds at least one day before the barbecue. Decide where party tents, tables, chairs, lighting and the barbecue will go, keeping the barbecue well away from fabric and crowded walkways.
- Set up separate areas for raw preparation, serving and waste. Meat tongs, cutting boards, knives, serving utensils and reusable tableware should not be mixed between raw meat and cooked food.
- Allow extra time for the barbecue to heat before serving. Keep meat thermometers and oven mitts beside the grill, and have aluminum tray pans and foil ready for cooked food that needs to stay warm or rest.
