- Collect dietary requirements before finalising portions, and place a clear diet label beside every suitable dish. Keep vegetarian portions separate from shared serving spoons.
- Prepare the room in serving order: reception desk first, tables and chairs next, then the buffet, drinks buffet and coffee corner. This prevents guests from blocking the food line while they register.
- Start chilling drinks several hours before arrival and set out separate drinking and wine glasses. A cooler is useful when the drinks buffet cannot be placed close to a refrigerator.
- Wash and cut vegetables, peel the potatoes and prepare cold components before guests arrive. Leave enough time to cook or reheat the mash without making the buffet wait.
