Tips

  • Plan roughly 150–200 g of savoury food per guest, including pasta salad, Caprese, antipasti and bread, then add fruit or dessert separately. This prevents the bread and antipasti from disappearing before the main dishes are served.
  • Allow two to three drinks per person for the first hour, plus water. Buy ice packs at the same time as the drinks; forgetting cold storage is one of the easiest ways to delay serving outdoors.
  • Pack one reusable place setting per guest and keep at least two serving spoons, two pairs of serving tongs and several serving platters available. Shared food is much easier to serve when guests do not use their own cutlery.
  • Take one picnic blanket or seat per guest where possible, and provide enough table space for both food and tableware. Add a party tent if the forecast suggests strong sun or rain, rather than arranging it after the food arrives.
  • Shop for transport supplies before cooking: coolers, ice packs, lidded serving trays and thermos flasks. Wash vegetables and cool the pasta completely before packing so warm food does not heat the rest of the cooler.
