Tips

  • Ask guests about dietary requirements when they sign up, not on the day itself. Finalise the guest list at least 3 days before the barbecue so you can confirm quantities and the halal menu.
  • Check the weather forecast and venue 48 hours beforehand. If you are using party tents, tables, coffee machines or kettles, confirm that the available power supply can handle the equipment and keep extension cords away from wet areas.
  • Buy chilled meat and other perishables as close to the event as practical, then store the meat refrigerated until preparation. Chill drinks for several hours rather than relying on ice at the last minute.
  • Prepare vegetables, salads, marinades and sauces before guests arrive, and cover prepared food until serving. Keep separate cutting boards, knives and serving tools available where halal food needs its own preparation area.
